I'd do a trip to Europe, climb the Eiger, Matterhorn and then ski Mount Blanc, then I'd paddleboard from the cinque terra in italy down to the Almafi Coast, then i'd kayak to the French Riveria and lastly I'd ride to Paris on horseback and spend the a few days there finishing up my latest novel.

I knocked off #1 this year with four months of hiking in NZ, so I'm now on #2.

It's probably a bit contrary to the topic, but most of the places I gawk at are in the US; Maybe its because I know I could actually go there in the future, but I'm still not quite sure. My dream would be to do a grand tour of the national parks and areas of California, Oregon, and Washington. Backpacking in Joshua Tree, Sequoia/King's Canyon, Yosemite :-D, and the Columbia River Gorge, would be great.

Lots of awesome suggestions in this thread and I'll throw my .02 cents in, but only from the places I've been so far that were rare, unique and spectacular opportunities to experience.

INTERNATIONAL:
In a heartbeat, I would return to Lapland (what Finland, Sweden, and Norway collectively consider their regions above the Arctic Circle). From a landing at a tiny Arctic airport to eating a traditional Lappish meal of reindeer and Lingonberry sauce to seeing the Northern Lights, it was a trip I still can hardly comprehend how lucky I was to be able to take.

I flew into the Nordic airport in Ivalo, Finland and a random girl I met right before the trip from couchsurfing.com picked me up. We stopped at a secluded organic reindeer farm to pick up some fresh meat to have for dinner. We drove about an hour north to Inari (largest most sparsely populated municipality in the country with a population density of 1 person/square mile when I was there) where she lived in a very small cottage heated solely by sauna and cast-iron stove in the middle of nowhere in Lapland - how cool. We also checked out a museum dedicated to the indigenous Sami people. Here I am 200 miles north of the Arctic Circle connected to Wi-Fi while watching reindeer freely roam across the lake in her backyard. It was the farthest north I've ever been.

Watching the setting sun and infused with fresh arctic air at my host's cottage 200 miles
north of the Arctic Circle in Lapland (Inari, Finland):

I took a bus the next morning 50 miles south to spend a polar night at Kakslauttanen Arctic Resort, an ethereal resort of a glass-covered igloo village, little ice hotels, and log cabins. I honestly saw this place in a picture somewhere a year or so ago before my trip and knew I had to go there. I reserved a glass-covered igloo for the night and of the many activities offered, I signed up for an "Aurora Hunting Safari" (go look for the Aurora borealis) via snowmobile late that night. Our guide showed us how to spot the aurora as it wasn't as easy as I thought, and for the rest of the night I had intimate views from inside my igloo of the Northern Lights dancing across the sky. Simply captivating.

Kakslauttanen (and especially Lapland) is unquestionably one of those once-in-a-lifetime experiences I've had and a place most would consider close to otherworldly; I wish I had booked another few nights but had to continue on with travel.

Two things I suggest that I would have instantly added to my polar exploration if I had more time in Lapland:
1) I would have loved to hang out with the native Finnish arctic cowboys (reindeer herders) for a day, just observing their way of life at the extreme.
2) Take a traditional sauna (after all, sauna originated from that country).

DOMESTIC:
If you want to stay closer to home...GO TO ALASKA! Definitely hit Denali National Park and try and get back into Kantishna while at the park if you can. In addition to Lapland, it's the most remote place I've ever been (I did stay at the backcountry lodge there) and is really neat back in there; both times I've been, I've been completely enthralled and speechless. The only problem is you can't get all the way back in there by public transportation - you either have to fly in, take a 7-hour bus ride, or backpack. If you have the money, definitely take a 360-degree flight-seeing tour with my buddies at Kantishna Air Taxi - they run the operation and you literally have the most intimate IMAX flight sequence around Denali itself - so worth it! KAT Air is also the only outfitter that flies into Kantishna. There are so many great little hikes right out of Kantishna that provide gorgeous vantage points of Denali. Wonder Lake is also nearby to get stunning views of Denali and the Alaska Range from the north, which is where this was taken from:

Outside of DNP, the Kenai and its fishing villages are incredible. I have not yet been to the southeastern part of the state but visiting Valdez, Sitka, Ketchikan and the Wrangell-St. Elias National Park are high on my Alaska list. And after watching NFL Network's Football Town: Barrow, Alaska, I now have to go see this northernmost U.S. town of Barrow.

As mentioned, these are places I've already been that I'm suggestions for trips... I wouldn't even know where to start for places I want to go! Hope it gives you some more ideas.

"Is there any need to offer proof that this odious perversion of the law [socialism] is a perpetual source of hatred and discord; that it tends to destroy society itself? If such proof is needed, look at the United States [in 1850]. There is no country in the world where the law is kept more within its proper domain: the protection of every person's liberty and property. As a consequence of this, there appears to be no country in the world where the social order rests on a firmer foundation."

Too many places still to visit.

Iran is on my list, as is Georgia.
Peru, the mountain stuff, but also this German / Austrian enclave called Oxapampa deep in the Amazon.
Saxon Romania and the former Yugoslavia.
