+1 on Sniktau, and S. Boulder / Bear Peak.

Sniktau is easy to get to off of the Loveland Pass Road, less than ten minutes from I-70 at the Eisenhower Tunnel.

S. Boulder and Bear Peaks are easily reached from Boulder or Denver, off of Eldorado Springs Drive near Hwy 93.

You might also want to check out Pettingel Peak (13,553'), at the top of Herman Gulch. The trailhead for this hike/climb is located immediately off of Exit 218 from I-70, between Georgetown and the Eisenhower Tunnel. The climb is a walk-up, and the hike to the base of the peak is beautiful.

I would second Bear and Boulder peak. While altitude wise they are not that high, they are the first bib peaks in the foot hills so the views are quite awesome. And it is a hike that will get your blood flowing too, pretty steap hike if I remember correctly. Plus you can easily do both in one day.
