Not exactly Sea-to-Summit, but was planning on Evans-from-my-house this summer. No bike just hike - should take 3 days.

Some ones that I've done at least some of - all day tripable

Easy morning run: https://listsofjohn.com/peak/87780 . Clark's Mountain near Seaside, OR.
Mt Marathon, Alaska. I've only made it as high as 3k, but the summit is 5k.
Gastineau, Roberts, Sheep near Juneau, AK. I made it about halfway and then got stymied by snow in June....
Cadillac Mtn in Acadia. Rode bikes up to the summit. There's other peaks around there too, some with ladder rungs built into the rocks.
Diamond Head on Oahu
Mt Brandon in Ireland

backpack - or bike (I would personally backpack too many cars for biking)

There are a couple of routes from Badwater to Whitney, which start a fair bit below “sea.” Beyond that, Chile probably rules all when it comes to sea to summit routes.

Cone Peak on the Big Sur coast is a good one. 1 vertical mile in just 5 miles.

I've done Haleakala, sea-to-summit, in a day. Makes for a 10,000 day and one hell of bushwhack to get up there. It was really cool to work my way through different ecosystems and see parts of an over-traveled island that no one else seems to get to.

When in Hawaii, the 0ers provide big challenges.

12 posts in, and no-one's mentioned Mt St Elias? 18,008' vertical and about 11 miles from where the Tyndall Glacier flows into Taan Fiord (and getting closer as the glacier retreats). https://vimeo.com/225041164
