Check out the Rainbow Lodge in South Fork. It was our go to when hiking those peaks last year and rates were incredibly reasonable! We didn't do top of the line anything because it's not like you're there long when you're getting up early to hike!

Alternate route option that I don't see mentioned here yet: You can make a loop up the CT/CDT from Eddiesville to the South Ridge and down Stewart Creek (or reverse). It's a 5-10 minute walk between the trailheads. I thought the valley the CDT goes up from Eddiesville was pretty pleasant, you get a good look at the Organ Pipes on Organ, and it's a very good trail to the saddle between San Luis and Pt13166.

I never did a TR, but if you check out a map it's pretty clear what to do. I did it clockwise, parking at Stewart Creek and doing the short downhill to Eddiesville on fresh legs. Take the CDT up to the saddle South of San Luis, then you follow the South Ridge route to the summit. Stewart Creek (standard route) down to the car. CalTopo estimate is that it's about 17mi and 3850' gain, which seems right. Like the Stewart Creek approach, it's a lot of miles, but they're easy miles: it's all class 1 trail. I did it as a backpack and tacked on Organ from ~12k on the Stewart side (class 2 off-trail with another ~1800' ascent).
