I'm building a bucket list of iconic trail running epics that can completed as single day endeavors.
Think Enchantment Lakes loop, Rim To Rim, Half Dome, La Luz / Sandia, the Presidential Traverse, Marin Headlands, Four Pass Loop, etc.

I am unable to walk away from the mountain without climbing it. An unclimbed mountain tugs at my consciousness with the eternal weight of time itself. Until I've pressed my face into it's alpine winds, hugged it's ancient granite walls, and put it's weathered summit beneath my heal I'm unable to resist it's attraction.Knowing nature gives the mountain more time than she gives us adds urgency to the obsession. As has been said before; the mountain doesn't care.

Zion Traverse, Ten Mile Traverse, Pawnee-Buchanon Loop in IPW.

Definitely look into Rim2Rim2Rim. I would also add Pawnee-Buchanan loop. To show some local love, Boulder Skyline traverse which still IMO is one of the best ways to get ready for summer season if you keep away altitude acclimatization aside. There is also the Zion Traverse, I have backpacked it as a 5 day group trip before and it has some of the most beautiful views out in Utah. Also if you are looking for some scrambling along with some running, the Longs radical slam comes in to mind. I have read some really good trip reports on the site about it.
Now if you are looking for an out of the world adventure and a really long day or a two day trip and total solitude, I have a rough route in making in the Maze district in Canyonlands that is like a dream for me. I can totally share the details if anyone is interested. Basically it's dropping in from the North Trail and coming out of Golden stairs. There is enough water on the route so the biggest no water stretch would be 14 miles. This is more like a 2 day fast packing trip. But an actual trail runner can totally do this in a day.

Gosh so many! US only??? Add Mee & Knowles, Buckskin/Paria (both Colo Plateau). Rae Lakes Loop of course. Many depend on your max distance in a day & if you accept some scrambling!

White rim Road (^see above dude for beta on that one), WURL in wasatch (not really much of a run, more Nolans-esque) plus about a million others that aren't "iconic".

John Stamsted did White Rim unsupported by pushing a cart full of water! I like that guy.

I'll second Peter with Mee & Knowles. Really beautiful off trail (some on trail) route. Also would add the Teton Crest Trail (not the full loop mentioned). Also, if you're really speedy, the Colorado Trail from Molas Pass to Durango would be a good one!
